Tom Norrington Davies

Tom is a cook and writer. He runs the kitchen at The Eagle Public House in Farringdon, London where has worked since 1996. He took over as Head Chef in 1998 and was a contributor to their book Big Flavours and Rough Edges in 2001. He learned to cook when he was young, taught by his grandmother and mother. His family travelled extensively and Tom grew up with several different culinary traditions. He studied Drama at the University of Wales but found himself drawn to the catering trade in his early twenties and has been cooking ever since.
